School Paper Organization

Well, we have been "Back to School" for almost a month now.
 
  I don't like school! (SHHH! Don't tell the kids!) 

I don't like school because it takes my kids away! I miss them when they are gone. Okay, I know they have to go to learn. And that's what makes me feel better. This year all my kids have the best teachers and it has brought me comfort knowing they are well loved and taken care of.

For the past few years I have put all the important school papers in my "School Binder". Each year I take the old out, file what I want to keep and start over for the next year. I would put their school papers like their weekly "Newsletter", spelling words, etc... in an envelope I had made for the side of the fridge. This year I think I 'm going to do something different. It may not work and I'll go back to my old way.


I'm going to put all of the weekly school papers, permission slips, book orders, etc.. on a clip board. I will hang it up in the office where it is easy to reach for all of us... except the baby, of course! The fridge was starting to look a little cluttered. I like things nice and neat, so we'll see how this goes!

Easy Chicken Enchiladas

August 31, 2010
3 Chicken breasts, cooked and chopped
3 cans cream of chicken soup, healthy/reduced fat
Monterey Jack cheese, shredded
1/2 C milk
*optional: sprinkle of taco seasoning
flour tortillas
shredded lettuce
sour cream
guacamole

1. Mix cooked chicken and soups and milk * A sprinkle of taco seasoning..
2. Spoon mixture in middle of tortilla. Roll up with sides open. Lay in greased 13 x9 pan.
3. Repeat untill all tortillas are gone. * Leave at least a cup of chicken soup mixture.

Pasta Salad

July 13, 2010
1 box pasta~ bow tie or elbow
2 bell peppers, diced(I use red, green, and yellow for color)
1 onion, purple or regular, diced small
1 C mayo
1/4 C EVOO(extra virgin olive oil)
a few dashes of pepper
a few dashes of salt

1. Boil noodles, drain, rinse with cold water to cool.
2. Mix mayo, oil, salt, & pepper in a bowl.
3. Mix pasta and mayo mix together.(It may look creamy, but that's okay)
4. Add more salt and pepper to taste. Cover.
5. Let it sit in the refrigerator overnight to let the flavors blend.

T~ Throw away and trim dead flowers & plants/ fertilize flowers and plants
W~ clean under couches(move!), and clean under the cushions
T~ detail dust 
F~ de-clutter and add fresh flowers and a candle

*If you have children have them help you with these chores- it's all about learning!

Fried Okra & Sweet Fried Okra/Green Tomatoes

The sweet fried okra recipe was made on accident. A few years ago we took all the ingredients to my mother-in-laws to make fried okra....cut okra, flour, and cornmeal...or what I THOUGHT was cornmeal. As soon as we started trying it, we realized it tasted "sweet".

You see, I am going blind in my left eye, and my vision in my other eye isn't so great either. I thought I grabbed the cornmeal but instead, I grabbed the POWDERED SUGAR!!! That's right! It tasted almost like funnel cake!

Her worth is far above jewels." Proverbs 31:10 ~~ I am a stay-at-home-mom(SAHM) married to the love of my life, Jeff Nelson. We have five wonderful boys. Ryan(13), Seth(11), Ian(8), Noah(5), Luke(4), and Jack (born April 2010). We live in Tennessee on 4 acres. I grew up the first few years of my life on a dairy farm in Missouri and loved country living. I was saved at a young age by the grace of God and shed blood of Jesus during that time of simple country living. That part of my life is very dear to me. God taught me many things as a baby Christian that I can still think about today. Then we moved to Memphis when I was in the 5th grade. I learned to love the city life, too. It was a completely different way of life. My whole family still lives in Missouri, still does a little farming and simple country living. When Jeff, the kids, and I moved from the city to the country, I incorporated my city life with my country background. My mom laughs at me when I cut my grass on my John Deere tractor while drinking my Starbucks Mocha and wearing my fancy sunglasses. And when I am shampooing my carpet in my high-heeled black boots. I just love those boots! But I would love to share about how I got to be the way I am today, The Victoriously Organized Woman! I used to work as a supervisor at bank for years. I had to dress up everyday. After the birth of our second child we decide I should be a SAHM. One of the best decision I've ever made. But I made a bad decision, too. I hardly ever dressed up anymore. I hardly ever wore make-up. After about a year I looked in the mirror and said, "OH MY! Jeff has to come home to this!?!" He is so wonderful he said he liked me that way, "natural". Well , I realized that I didn't. It made me feel bad about myself. I felt disorganized, tired and stressed and a little "rough" looking. I felt I just couldn't get it all done. At this time I was diagnosed with Meniere's Disease. I wasn't able to do certains things. Like mop the floor of my completely hardwood floor home that I was obsessed about keeping clean. The doctor told me I couldn't have salt, caffeine, or stress! "What?! Are you kidding!?" So , then I decided to change my routine,thought pattern, and cooking. I began to get up early, shower and dress, put on make up. Always being ready to leave whenever I needed to. I established routines that helped me eliminate extra cleaning and stresses. I was able to make more time for myself and make more time for my family. And the family had more time for each other. I made more time for God and others. This made me feel better about myself. I am so happy about how this changed my life I want to share it with everyone.
