Sweet Potato Fries

I purchased a large bag (5 gallon bucket size) of sweet potatoes from a local farmer. Now, what to do with all of those potatoes!! The usual ~baked topped with butter, cinnamon and sugar, sweet potato casserole, and mashed sweet potatoes (seasoned with butter, cinnamon and sugar).

Sweet Potato Fries
~ Sweet potatoes
~ olive oil
~ butter,melted/ amount depends on how many sweet potatoes you have
~ cinnamon
~ sugar
~ salt and pepper

A Muddy Family Fun Day

Last weekend we stayed home all weekend, except for church. We are not used to staying at home all weekend. I love to go-go-go. I'm not a homebody. I blame it on my ADHD. Polish Soup

Polish Soup
~1 soup bone (found at a butcher or use 4 beef bouillion cubes)
~2 cans diced tomatoes(you can use whole or fresh,diced)
~1 bunch of celery, all of it chopped, remove the end- keep the leaves.
~Pickling Spice
~water
~1 tsp salt 
~Dumplings, egg noodles, or rice
1. In a very large stock pot, fill with water and soup bone. Simmer 1 hour.
2. Remove soup bone, add tomatoes and celery.
3  Put pickling spice in a metal tea diffuser, or a cheesecloth(golf ball size amount)

I forgot to mention in my last post, Grocery Cart Challenge, about my sweet potatoes. We purchase a big bag full of sweet potatoes for only $6.00 around this time every year.  If you live in the Memphis area: It is an older man that sits by the side of the road as soon as you enter Oakland. Tummy Yummy recipe Sept 15

Homemade Bread Crumbs

1. Lay out bread that is stale or will be stale before it molds.
2. Lay on cookie sheets and bake in oven/ 350 degrees, 5-10 mins, until toasty.
3. Put in food processor or blender, blend until they are very tiny crumbs.
4. Put in tupperware container. You can add spices if you like seasoned bread crumbs. i always put Italian seasoning in    mine.
5. Put container in freezer to keep.

Use In:
~ meatloaf, in place of crackers
~ to bread chicken

If you are looking for a quick and very simple, yet very tummy yummy meal this is the one! We have a pizza dish almost every Friday. This is one I came up with just so we can have something different. It was an instant hit! Here are a few ideas.

Holly Nelson "Let it be the hidden person of the heart, with the incorruptible beauty of a quiet and gentle sprirt, which is precious in the sight of God." 1 Peter 3:4 - "An excellent wife,who can find? Her worth is far above jewels." Proverbs 31:10 ~~ I am a stay-at-home-mom(SAHM) married to the love of my life, Jeff Nelson. We have six wonderful boys. Ryan(13), Seth(11), Ian(8), Noah(5), Luke(4), and Jack (born April 2010). We live in Tennessee on 4 acres. I grew up the first few years of my life on a dairy farm in Missouri and loved country living. I was saved at a young age by the grace of God and shed blood of Jesus during that time of simple country living. That part of my life is very dear to me. God taught me many things as a baby Christian that I can still think about today. Then we moved to Memphis when I was in the 5th grade. I learned to love the city life, too. It was a completely different way of life. My whole family still lives in Missouri, still does a little farming and simple country living. When Jeff, the kids, and I moved from the city to the country, I incorporated my city life with my country background. My mom laughs at me when I cut my grass on my John Deere tractor while drinking my Starbucks Mocha and wearing my fancy sunglasses. And when I am shampooing my carpet in my high-heeled black boots. I just love those boots! But I would love to share about how I got to be the way I am today, The Victoriously Organized Woman! I used to work as a supervisor at bank for years. I had to dress up everyday. After the birth of our second child we decide I should be a SAHM. One of the best decision I've ever made. But I made a bad decision, too. I hardly ever dressed up anymore. I hardly ever wore make-up. After about a year I looked in the mirror and said, "OH MY! Jeff has to come home to this!?!" He is so wonderful he said he liked me that way, "natural". Well , I realized that I didn't. It made me feel bad about myself. I felt disorganized, tired and stressed and a little "rough" looking. I felt I just couldn't get it all done. At this time I was diagnosed with Meniere's Disease. I wasn't able to do certains things. Like mop the floor of my completely hardwood floor home that I was obsessed about keeping clean. The doctor told me I couldn't have salt, caffeine, or stress! "What?! Are you kidding!?" So , then I decided to change my routine,thought pattern, and cooking. I began to get up early, shower and dress, put on make up. Always being ready to leave whenever I needed to. I established routines that helped me eliminate extra cleaning and stresses. I was able to make more time for myself and make more time for my family. And the family had more time for each other. I made more time for God and others. This made me feel better about myself. I am so happy about how this changed my life I want to share it with everyone.

Easiest Homemade Salsa
~5 large tomatoes, diced or 2 cans diced toms
~2 tablespoons diced jalapenos(fresh or jarred)

 1. in a food processor or blender, mix tomatoes and jalapenos.

*Have your child do these things in their bedroom everyday,also.

M~ bedroom: wash curtains, replace with fall/winter curtains./ bath: wash bath rug
T~ bedroom: clean under bed. / bath: throw away empty bottles
W~ bedroom: clean ceiling fan./ bath: clean bath toys
T~ bedroom: and bath: clean windows and sills.
F~ bedroom: detail vacuum./ bath: detail mop

Remember , 15 minutes is all you need to bless your home everyday!

Weekly Menu
I'm trying to keep the menu very simple. It is soccer season and they don't like to eat much before they play. I pack a picnic of snacks for them for during( for the little ones) and after the game.  We also have a quick and easy meal before church on Wednesdays.
 Beakfast:
S~ cinnamon cake 
T~ egg and biscuits with choc gravy
W~ cereal 
T~ bisc's and sausage gravy
F~ pancakes with homemade syrup

Lunch:
S~ BBQ nachos
M~ meatballs with noodles, salad, banana cookies
T~ egg salad, chips, grape...

Grocery Cart Challenge
This week I tried to not buy much. But I was very nice because the kids requested special drinks for school.And I bought special food for the holiday. That added up quick. I feel like I spent way too much money on that! Then there was also a special request for BBQ nachos. Usually I make meals with what we have on hand because it is much cheaper. If you are looking for a quick and very simple, yet very tummy yummy meal this is the one! We have a pizza dish almost every Friday. This is one I came up with just so we can have something different. It was an instant hit! Here are a few ideas.

French Bread Pizza 
~ 1 garlic and herb french loaf
~ spaghetti sauce or pizza sauce or tomato sauce with italian seasoning mixed in
