What's On My iPod This Month

Just a little confession about me... I HATE to exercise. There, I admit it! Anyone that knows me , knows that. I would rather do my "natural" exercising~ Playing with the kids, jump on trampoline, swing the kids, play basketball, walk at the park, play tag with kids, etc...

But, lately I've really been determined to get healthy again. I've been walking on the treadmill, but I am so impatient. I can never walk fast enough...I'm sure thats my ADHD talking. I got the new book that Oxygen "my favo...

Weekly Menu~ April 10-16

Clean out the Pantry Week~
 This week I am unable to go to the grocery store. I had a great menu planned, too! Apricot pork medallions, shrimp veracruzana, sirloin steak with caramelized onions, lemon honey chicken, and Mexican mole pork chops....but that will just have to wait until next week..... 

So, I had to look through the pantry and fridge to find some meals. They aren't the fanciest. My kids don't care about fancy anyway. But they are good healthy meals. Sometimes we have great meals in...

Carrot Soup

Gather ingredients: carrots, onion, sweet potato, garlic, coconut butter, chicken stock, orange juice


Heat 1/2 cup coconut butter in large stock pot.


Peel and chop 1 bag of carrots and 1 sweet potato. Add onion to pot and sautee then add carrots and sweet potato. Stir and heat until starting to get tender.


Add 2 boxes of chicken stock and  1 Cup orange juice, and 1 tsp ginger


Heat to boiling. Reduce and simmer for 1 hour. 


Once tender, pour into a blender and puree until smooth. Pour into bowls an...

Asian Salmon Sandwiches

Gather ingredients: lime juice, canned salmon, ginger, soy sauce, chopped celery.


Mix salmon, celery, 1 tsp ginger, 2 TBSP soy sauce.


It should look like a salmon salad


Scoop onto a whole grain bun with lettuce and serve with Asian noodles.
* Asian Noodles~ heat peanut butter and soy sauce in small pot. Cook sobo or undon noodles as directed and mix*

Caribbean Chicken

Gather: chicken breast, lime, orange, garlic, ginger, nutmeg, cinnamon, mace, hot sauce, agave nectar, molasses, coconut butter, salt and pepper

 


Marinade chicken for a four hours or overnight in: juice and zest from lime and orange, 1 tsp agave nectar, 1 tsp molasses, nutmeg, ginger, garlic, cinnamon, mace, and hot sauce.(Save the marinade!)


Heat 2 TBSP coconut butter.


Add chicken and brown slowly on each side.


Pour reserved marinade over chicken. Cover and cook for 30 minutes, or grill.

Moroccan Chicken and Lentils

Gather: lentils evoo, red wine vinegar, cumin, chili powder, onion, garlic, cinnamon, cilantro, chicken breast


Cook lentils and directed on package. Mix 1/4 evoo, 1/4 red wine vinegar, 2 TBSP cumin, garlic, and chili powder, 1tspn salt. Pour over lentil and set to the side.

 

(I did not do this but I suggest this~ Heat evoo in a large skillet. Add onions and sautee until tender and brown)
Add chicken, salt, 1 tsp cumin, 2tsp chili powder, 1/4 cinnamon. Sautee until chicken has cooked through.

Sweet Potato Beef Stew

Gather 2 sweet potato, onion, large can of crushed or pureed tomatoes, lean stew meat, chili powder, cumin, salt, pepper.

 

Peel and chop sweet potato and onion.


Brown meat in evoo in large pot, Then remove.


Heat onion and garlic until tender. Then add chili powder and cumin.


Add sweet potatoes, meat, and tomatoes.Simmer for 1 hour. Sweet potatoes should be tender.



Serve with flax crackers or Ezechiel bread.

Mexican Rice and Beans

Gather ingredients: evoo, cumin, coriander, cinnamon, chili powder, onion, garlic, cooked BROWN rice, pinto beans(cooked), chicken broth, tomato paste, salt, pepper(opt)
 

 

Heat cumin, coriander, chili powder, and cinnamon in dutch oven or large pot until fragrant. Add chopped onion and garlic and heat a little more.


Add rice, beans, stock, tomato paste, salty, and peppers.

Reduce heat and simmer for 30 minutes.


Serve Hot! with a salad and Ezechiel bread. Enjoy!

I got everything for free!...except for tax of course. I received $17.50 in "extra bucks" last week and used them for my purchases this week. I still used my coupons for extraordinary deals!

About Me


Holly Nelson "Let it be the hidden person of the heart, with the incorruptible beauty of a quiet and gentle sprirt, which is precious in the sight of God." 1 Peter 3:4 - "An excellent wife,who can find? Her worth is far above jewels." Proverbs 31:10 ~~ I am a stay-at-home-mom(SAHM) married to the love of my life, Jeff Nelson. We have six wonderful boys. Ryan(15), Seth(13), Ian(10), Noah(7), Luke(5), and Jack(2). We live in Tennessee on 4 acres. I grew up the first few years of my life on a dairy farm in Missouri and loved country living. I was saved at a young age by the grace of God and shed blood of Jesus during that time of simple country living. That part of my life is very dear to me. God taught me many things as a baby Christian that I can still think about today. Then we moved to Memphis when I was in the 5th grade. I learned to love the city life, too. It was a completely different way of life. My whole family still lives in Missouri, still does a little farming and simple country living. When Jeff, the kids, and I moved from the city to the country, I incorporated my city life with my country background. My mom laughs at me when I cut my grass on my John Deere tractor while drinking my Starbucks Mocha and wearing my fancy sunglasses. And when I am shampooing my carpet in my high-heeled black boots. I just love those boots! But I would love to share about how I got to be the way I am today, The Victoriously Organized Woman! I used to work as a supervisor at bank for years. I had to dress up everyday. After the birth of our second child we decide I should be a SAHM. One of the best decision I've ever made. But I made a bad decision, too. I hardly ever dressed up anymore. I hardly ever wore make-up. After about a year I looked in the mirror and said, "OH MY! Jeff has to come home to this!?!" He is so wonderful he said he liked me that way, "natural". Well , I realized that I didn't. It made me feel bad about myself. I felt disorganized, tired and stressed and a little "rough" looking. I felt I just couldn't get it all done. At this time I was diagnosed with Meniere's Disease. I wasn't able to do certains things. Like mop the floor of my completely hardwood floor home that I was obsessed about keeping clean. The doctor told me I couldn't have salt, caffeine, or stress! "What?! Are you kidding!?" So , then I decided to change my routine,thought pattern, and cooking. I began to get up early, shower and dress, put on make up. Always being ready to leave whenever I needed to. I established routines that helped me eliminate extra cleaning and stresses. I was able to make more time for myself and make more time for my family. And the family had more time for each other. I made more time for God and others. This made me feel better about myself. I am so happy about how this changed my life I want to share it with everyone.
