Chalupa

(sourced from college friend-and has previously inspired a bachelor to cook! )

3lb boneless pork roast
2 cloves garlic
1 small can diced chiles
1 lb. pinto beans sorted and rinsed
1 Tbsp. salt
2 Tbsp. chili powder
1 Tbsp. cumin
1 Tbsp. oregano

Put all in pan and cover with water. Cook over low heat for 3 hours (or in crockpot).
Break roast--put on cutting board and shred or cut if too hot.
Put back in pot and cook for an additional hour or until beans are tender.

Serve over Tortilla/Doritos chips with vegetables/cheese over top


Suggested Toppings (basically whatever you enjoy on tacos) 
Onions
Lettuce
Tomato
Cheese 
Avacado
Sour Cream
Doritos/tortilla chips

Freezes/Reheats very well


Hot Chili Beans
(my mom's recipe--my kids love this)

Serves 6. (Easily multiplied, freezes well)

1 can red kidney beans
1lb ground beef
28 oz. can petite diced tomatoes (OR 2c. tomato juice)
1 large onion, diced
1Tbsp. chili powder
1 tsp. salt
1/2 tsp. black pepper

Prepared in large skillet or electric frying pan
Brown ground beef and onions.
Add spices and other ingredients
Cover. Simmer 1 hour.
Serve over rice.

I usually serve with an additional veggie on the side, but it holds its own well


Kielbasa Supper ( a polish classic :) )
This recipe is for baking in a roasting pan or in a counter top roaster. Recipe is easily halved and prepared in crockpot.

Freezes well, serves many

1.5 lbs Kielbasa (or 2 pkgs kielbasa)-cut into bite sized pieces
32 oz. jar sauerkraut
2 cans tomato soup
1 small head of cabbage-cut into chunks
1 large onion, sliced
5 medium potatoes--cut into bite sized pieces
1/2 lb sliced bacon (freeze bacon, then chop and pan cook and drain)
12 carrots, peeled and cut into bite sized pieces
salt and pepper to taste.

(Now add in layers)
Spread 1st can of soup in bottom of pan
sprinkle sauerkraut over soup
1 can of water
cabbage chunks
potatoes
onions
carrots
kielbasa
bacon 
salt and pepper
second can of soup

Cover tightly. Bake at 325 for 2.5 hours (or until veggies are fork tender)


Potato Salmon Patties
(an internet find, kids love--never had leftovers)

Serves 5 (abt 10 patties total)

1-14.75 can salmon, drained and flaked
2 eggs beaten
1/4 c. bread crumbs
1/4 c. potato flakes
1 medium onion, diced
1 clove garlic, minced
1/4 tsp. dried dill weed
1/4 tsp. celery salt
salt and pepper to taste
2 Tbsp olive oil (for cooking)

1. in a medium bowl, mix salmon, eggs, bread crumbs, potato flakes, onion, garlic and spices. 
2. Form mixture into 2 inch balls and flatten into patties about 1/2 inch thick.
3. Heat olive oil in a medium skillet over medium heat. Cook patties about 5 minutes per side until lightly browned. (Honestly, until my george forman grill died, i cooked them without the oil for 5 minutes total)

Her worth is far above jewels." Proverbs 31:10 ~~ I am a stay-at-home-mom(SAHM) married to the love of my life, Jeff Nelson. We have six wonderful boys. Ryan(13), Seth(11), Ian(8), Noah(5), Luke(4), and Jack (born April 2010). We live in Tennessee on 4 acres. I grew up the first few years of my life on a dairy farm in Missouri and loved country living. I was saved at a young age by the grace of God and shed blood of Jesus during that time of simple country living. That part of my life is very dear to me. God taught me many things as a baby Christian that I can still think about today. Then we moved to Memphis when I was in the 5th grade. I learned to love the city life, too. It was a completely different way of life. My whole family still lives in Missouri, still does a little farming and simple country living. When Jeff, the kids, and I moved from the city to the country, I incorporated my city life with my country background. My mom laughs at me when I cut my grass on my John Deere tractor while drinking my Starbucks Mocha and wearing my fancy sunglasses. And when I am shampooing my carpet in my high-heeled black boots. I just love those boots! But I would love to share about how I got to be the way I am today, The Victoriously Organized Woman! I used to work as a supervisor at bank for years. I had to dress up everyday. After the birth of our second child we decide I should be a SAHM. One of the best decision I've ever made. But I made a bad decision, too. I hardly ever dressed up anymore. I hardly ever wore make-up. After about a year I looked in the mirror and said, "OH MY! Jeff has to come home to this!?!" He is so wonderful he said he liked me that way, "natural". Well , I realized that I didn't. It made me feel bad about myself. I felt disorganized, tired and stressed and a little "rough" looking. I felt I just couldn't get it all done. At this time I was diagnosed with Meniere's Disease. I wasn't able to do certains things. Like mop the floor of my completely hardwood floor home that I was obsessed about keeping clean. The doctor told me I couldn't have salt, caffeine, or stress! "What?! Are you kidding!?" So , then I decided to change my routine,thought pattern, and cooking. I began to get up early, shower and dress, put on make up. Always being ready to leave whenever I needed to. I established routines that helped me eliminate extra cleaning and stresses. I was able to make more time for myself and make more time for my family. And the family had more time for each other. I made more time for God and others. This made me feel better about myself. I am so happy about how this changed my life I want to share it with everyone.
